Description

A warm and comforting casserole featuring tender chicken and flavorful rice, perfect for family meals and gatherings.


Ingredients

  • 2 cups cooked rice (white or brown)
  • 1.5 lbs chicken (bone-in, skin-on recommended)
  • 1 can cream of chicken soup (or homemade equivalent)
  • 1 cup chicken broth
  • 1 onion, diced
  • 2 cups mixed vegetables (fresh or frozen)
  • Salt and pepper to taste
  • Garlic powder
  • Paprika


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the cooked rice, cream of chicken soup, and chicken broth. Stir until everything is well mixed.
  3. Season the chicken pieces with salt, pepper, garlic powder, and paprika.
  4. Spread the rice mixture evenly in a large casserole dish. Layer the mixed vegetables on top.
  5. Arrange the seasoned chicken on top of the rice and vegetables.
  6. Cover the dish with aluminum foil and bake for 30 minutes. Remove the foil and continue baking for another 15 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).

Notes

For added flavor, sauté onions before mixing. Substitute chicken with mushrooms or chickpeas for a vegetarian version.
