Ingredients

  • 4 large potatoes, peeled and diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup green onions, chopped
  • Salt and pepper to taste
  • Bacon bits for topping (optional)


Instructions

  1. In a large pot, combine the diced potatoes and chicken broth. Bring the mixture to a boil and cook until the potatoes are tender, about 10-15 minutes.
  2. Once tender, use a potato masher to mash some of the potatoes to achieve a thicker consistency, while leaving some chunks for texture.
  3. Stir in the heavy cream, cheddar cheese, and sour cream until everything is well blended. Season with salt and pepper according to your preference.
  4. Allow the soup to simmer for an additional 5-10 minutes, stirring occasionally to prevent sticking.
  5. Serve hot in bowls, garnished with chopped green onions and crispy bacon bits if you like.
