Description

A comforting and creamy crockpot meal featuring tender chicken, orzo pasta, and fresh spinach, perfect for busy weeknight dinners.


Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste


Instructions

  1. Place the boneless chicken breasts into the crockpot.
  2. Add the orzo pasta, chicken broth, minced garlic, Italian seasoning, and a dash of salt and pepper.
  3. Cover and cook on low for 4-5 hours, or on high for 2-3 hours until the chicken is tender.
  4. About 30 minutes before serving, stir in the fresh spinach and heavy cream to bring in that creamy texture.
  5. When it’s done, sprinkle generously with grated Parmesan cheese before serving. Enjoy your comforting meal!

Notes

For a lighter version, use half-and-half instead of heavy cream. For gluten-free, use gluten-free pasta. Store leftovers in an airtight container in the fridge for up to 3 days.
