Ingredients
- 1 lb boneless, skinless chicken breasts
- 1 cup orzo pasta
- 2 cups chicken broth
- 2 cups fresh spinach
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 3 cloves garlic, minced
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Place the boneless chicken breasts into the crockpot.
- Add the orzo pasta, chicken broth, minced garlic, Italian seasoning, and a dash of salt and pepper.
- Cover and cook on low for 4-5 hours, or on high for 2-3 hours until the chicken is tender.
- About 30 minutes before serving, stir in the fresh spinach and heavy cream to bring in that creamy texture.
- When it’s done, sprinkle generously with grated Parmesan cheese before serving. Enjoy your comforting meal!
Notes
For a lighter version, use half-and-half instead of heavy cream. For gluten-free, use gluten-free pasta. Store leftovers in an airtight container in the fridge for up to 3 days.
