Description

Effortlessly create a comforting Tuscan chicken and orzo dish in your slow cooker that the whole family will love.


Ingredients

  • 2 pounds boneless skinless chicken breasts
  • 1 ½ cups orzo pasta
  • 1 cup sun-dried tomatoes
  • 4 cups fresh spinach
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 3 cups chicken broth
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon black pepper


Instructions

  1. Season the chicken breasts with salt, pepper, and Italian seasoning. Optionally, sear them briefly in a pan for extra flavor.
  2. Pour the chicken broth into the crockpot, followed by the minced garlic and sun-dried tomatoes.
  3. Place the seasoned chicken on top of the other ingredients.
  4. Cover and cook on LOW for 4–5 hours or on HIGH for 2–3 hours, until the chicken is tender.
  5. Remove the chicken, shred or chop it, then return it to the pot.
  6. Stir in the orzo and spinach, cover, and cook on HIGH for an additional 20–30 minutes until the orzo is tender and spinach is wilted.
  7. Add heavy cream and Parmesan cheese, allowing it to thicken before serving.

Notes

For a lighter option, substitute chicken with turkey or use vegetable broth for a plant-based version. Store leftovers in airtight containers in the refrigerator for up to 3-4 days.
