Effortlessly create a comforting Tuscan chicken and orzo dish in your slow cooker that the whole family will love.
Ingredients
- 2 pounds boneless skinless chicken breasts
- 1 ½ cups orzo pasta
- 1 cup sun-dried tomatoes
- 4 cups fresh spinach
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 3 cloves garlic, minced
- 3 cups chicken broth
- 2 teaspoons Italian seasoning
- 1 teaspoon salt
- ½ teaspoon black pepper
Instructions
- Season the chicken breasts with salt, pepper, and Italian seasoning. Optionally, sear them briefly in a pan for extra flavor.
- Pour the chicken broth into the crockpot, followed by the minced garlic and sun-dried tomatoes.
- Place the seasoned chicken on top of the other ingredients.
- Cover and cook on LOW for 4–5 hours or on HIGH for 2–3 hours, until the chicken is tender.
- Remove the chicken, shred or chop it, then return it to the pot.
- Stir in the orzo and spinach, cover, and cook on HIGH for an additional 20–30 minutes until the orzo is tender and spinach is wilted.
- Add heavy cream and Parmesan cheese, allowing it to thicken before serving.
Notes
For a lighter option, substitute chicken with turkey or use vegetable broth for a plant-based version. Store leftovers in airtight containers in the refrigerator for up to 3-4 days.
