Description

Soft, fragrant buns infused with spices and sweet currants, perfect for festive gatherings or a cozy morning treat.


Ingredients

  • 4 cups all-purpose flour
  • 1 packet (2 ¼ tsp) yeast
  • ½ cup granulated sugar
  • 1 teaspoon salt
  • 2 teaspoons mixed spice (e.g., cinnamon, nutmeg)
  • ½ cup milk, warmed
  • ½ cup unsalted butter, melted
  • 2 large eggs
  • 1 cup dried fruit (currants or raisins)
  • 1 egg (for egg wash)


Instructions

  1. Mix together the warm milk, yeast, and sugar. Let it sit until frothy.
  2. Combine the flour, salt, and mixed spice in another bowl. Gradually add this dry mixture to the yeast mixture.
  3. Pour in the melted butter and add eggs, mixing until a soft dough forms.
  4. Knead the dough on a floured surface for about 10 minutes until it’s smooth.
  5. Incorporate the dried fruit into your dough, then place it in a greased bowl. Cover it with a towel and let it rise until doubled in size, about an hour.
  6. Once risen, punch down the dough and shape it into 12 equal portions. Place them in a greased baking pan and let them rise again for 30 minutes.
  7. Preheat your oven to 375°F (190°C). Brush the tops with an egg wash.
  8. Bake for 20-25 minutes or until golden brown. Cool before serving.

Notes

For enhanced flavor, consider adding a touch of orange or lemon zest to the dough. Kneading is key for a soft texture.
