Ingredients
- 4 cups all-purpose flour
- 1 packet (2 ¼ tsp) yeast
- ½ cup granulated sugar
- 1 teaspoon salt
- 2 teaspoons mixed spice (e.g., cinnamon, nutmeg)
- ½ cup milk, warmed
- ½ cup unsalted butter, melted
- 2 large eggs
- 1 cup dried fruit (currants or raisins)
- 1 egg (for egg wash)
Instructions
- Mix together the warm milk, yeast, and sugar. Let it sit until frothy.
- Combine the flour, salt, and mixed spice in another bowl. Gradually add this dry mixture to the yeast mixture.
- Pour in the melted butter and add eggs, mixing until a soft dough forms.
- Knead the dough on a floured surface for about 10 minutes until it’s smooth.
- Incorporate the dried fruit into your dough, then place it in a greased bowl. Cover it with a towel and let it rise until doubled in size, about an hour.
- Once risen, punch down the dough and shape it into 12 equal portions. Place them in a greased baking pan and let them rise again for 30 minutes.
- Preheat your oven to 375°F (190°C). Brush the tops with an egg wash.
- Bake for 20-25 minutes or until golden brown. Cool before serving.
Notes
For enhanced flavor, consider adding a touch of orange or lemon zest to the dough. Kneading is key for a soft texture.
