Ingredients
- 2 cups cooked chicken (shredded or diced)
- 1 cup long-grain rice
- 2 cups chicken broth
- 1 can cream of chicken soup
- 1 onion (chopped)
- 1 cup frozen peas and carrots
- 1 cup sharp cheddar cheese (shredded)
- Salt and pepper to taste
- 1 cup breadcrumbs for topping
- 2 tablespoons butter (melted)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the chicken, rice, chicken broth, cream of chicken soup, onion, and frozen vegetables. Blend well and season to taste.
- Pour the mixture into a greased 9×13 inch baking dish, spreading it evenly.
- Sprinkle the cheddar cheese on top, followed by the breadcrumbs. Drizzle with melted butter for a golden finish.
- Cover with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 15 minutes, or until the top is crispy and golden.
