Description

A comforting one-dish meal featuring tender chicken, savory rice, and a crispy topping, perfect for family gatherings.


Ingredients

  • 2 cups cooked chicken (shredded or diced)
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 can cream of chicken soup
  • 1 onion (chopped)
  • 1 cup frozen peas and carrots
  • 1 cup sharp cheddar cheese (shredded)
  • Salt and pepper to taste
  • 1 cup breadcrumbs for topping
  • 2 tablespoons butter (melted)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the chicken, rice, chicken broth, cream of chicken soup, onion, and frozen vegetables. Blend well and season to taste.
  3. Pour the mixture into a greased 9×13 inch baking dish, spreading it evenly.
  4. Sprinkle the cheddar cheese on top, followed by the breadcrumbs. Drizzle with melted butter for a golden finish.
  5. Cover with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 15 minutes, or until the top is crispy and golden.

Notes
