Description
A colorful pasta salad loaded with fresh vegetables, cheese, and a choice of protein, perfect for any gathering.
Ingredients
- 8 oz pasta (like rotini or penne)
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1 bell pepper, diced (any color)
- 1/2 cup red onion, finely chopped
- 1 cup mozzarella cheese, cubed
- 1/2 cup olives, sliced (optional)
- 1 cup cooked chicken, diced (optional)
- 1/2 cup olive oil
- 1/4 cup red wine vinegar
- 1 tsp Italian seasoning
- Salt and pepper, to taste
- Fresh basil or parsley, for garnish
Instructions
- Begin by boiling water in a large pot. Add salt and the pasta, cooking according to package instructions until al dente. Drain and rinse with cold water to stop the cooking process.
- In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, bell pepper, red onion, and mozzarella cheese. If using olives or chicken, add them as well.
- In a smaller bowl, whisk together the olive oil, red wine vinegar, Italian seasoning, salt, and pepper.
- Pour the dressing over the pasta mixture and toss until everything is well-coated.
- Taste and adjust the seasoning if necessary, then garnish with fresh herbs before serving.
Notes
For a great texture, do not overcook the pasta and allow the salad to chill for at least 30 minutes before serving.
