Description

A hearty bowl of split pea soup, perfect for chilly days, packed with rich flavors and nourishment.


Ingredients

  • 1 cup split peas
  • 1 medium onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 6 cups vegetable or chicken broth
  • 1 cup cooked ham, shredded
  • 1 bay leaf
  • Salt and pepper to taste
  • Olive oil


Instructions

  1. Rinse the split peas under cold water until it runs clear.
  2. In a large pot, heat a drizzle of olive oil over medium heat. Add the chopped onion, carrots, and celery, sautéing until they soften, about 5-7 minutes.
  3. Toss in the minced garlic and sauté for an additional minute until fragrant.
  4. Stir in the rinsed split peas, broth, shredded ham, and bay leaf. Bring the mixture to a boil.
  5. Lower the heat, cover the pot, and let it simmer for about 1 hour, or until the peas are tender.
  6. Remove the bay leaf, season with salt and pepper, and serve hot.

Notes

For a vegetarian version, substitute the ham with a plant-based alternative and ensure the broth is meat-free.
