Ingredients
- 1 cup split peas
- 1 medium onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 6 cups vegetable or chicken broth
- 1 cup cooked ham, shredded
- 1 bay leaf
- Salt and pepper to taste
- Olive oil
Instructions
- Rinse the split peas under cold water until it runs clear.
- In a large pot, heat a drizzle of olive oil over medium heat. Add the chopped onion, carrots, and celery, sautéing until they soften, about 5-7 minutes.
- Toss in the minced garlic and sauté for an additional minute until fragrant.
- Stir in the rinsed split peas, broth, shredded ham, and bay leaf. Bring the mixture to a boil.
- Lower the heat, cover the pot, and let it simmer for about 1 hour, or until the peas are tender.
- Remove the bay leaf, season with salt and pepper, and serve hot.
Notes
For a vegetarian version, substitute the ham with a plant-based alternative and ensure the broth is meat-free.
