Ingredients
- 2 pounds boneless skinless chicken breasts
- 1 ½ cups orzo pasta
- 1 cup sun-dried tomatoes
- 4 cups fresh spinach
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 3 cloves garlic, minced
- 3 cups chicken broth
- 2 teaspoons Italian seasoning
- 1 teaspoon salt
- ½ teaspoon black pepper
Instructions
- Season the chicken breasts generously with salt, pepper, and Italian seasoning. Optionally, sear them in a pan until golden brown.
- Pour chicken broth into the crockpot, then add minced garlic and sun-dried tomatoes.
- Place the seasoned chicken on top of the broth mixture.
- Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours until chicken is tender.
- Remove chicken, shred or chop, and return to crockpot.
- Stir in orzo and fresh spinach, cover, and cook on HIGH for an additional 20–30 minutes until orzo is tender.
- Mix in heavy cream and Parmesan cheese. Allow to thicken before serving hot.
Notes
For a lighter version, substitute heavy cream with half-and-half or a dairy-free alternative. Fresh herbs like basil or parsley can enhance the flavors.
