Description

A rich, creamy dish combining tender chicken, vibrant spinach, and zesty sun-dried tomatoes, perfect for hassle-free weeknight dinners.


Ingredients

  • 2 pounds boneless skinless chicken breasts
  • 1 ½ cups orzo pasta
  • 1 cup sun-dried tomatoes
  • 4 cups fresh spinach
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 3 cups chicken broth
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon black pepper


Instructions

  1. Season the chicken breasts generously with salt, pepper, and Italian seasoning. Optionally, sear them in a pan until golden brown.
  2. Pour chicken broth into the crockpot, then add minced garlic and sun-dried tomatoes.
  3. Place the seasoned chicken on top of the broth mixture.
  4. Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours until chicken is tender.
  5. Remove chicken, shred or chop, and return to crockpot.
  6. Stir in orzo and fresh spinach, cover, and cook on HIGH for an additional 20–30 minutes until orzo is tender.
  7. Mix in heavy cream and Parmesan cheese. Allow to thicken before serving hot.

Notes

For a lighter version, substitute heavy cream with half-and-half or a dairy-free alternative. Fresh herbs like basil or parsley can enhance the flavors.
