Description

Delightful and versatile pancake poppers, perfect for breakfast or brunch gatherings, easy to customize with various fillings.


Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk (or dairy-free alternative)
  • 1 large egg
  • 2 tablespoons melted butter (or coconut oil)
  • Optional: chocolate chips, blueberries, or diced fruit for filling


Instructions

  1. In a bowl, combine the flour, sugar, baking powder, and salt.
  2. In another bowl, whisk together the milk, egg, and melted butter.
  3. Pour the wet ingredients into the dry and mix until just combined.
  4. Preheat your popper maker or skillet over medium heat.
  5. Pour small amounts of batter into the popper maker or pour about 2 tablespoons onto the skillet. If adding fillings, place them in the center before covering with more batter.
  6. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip if using a skillet.
  7. Remove and repeat with remaining batter.

Notes

Serve warm with toppings like maple syrup, whipped cream, or fresh fruit. Store in an airtight container in the fridge for up to three days or freeze for up to three months. Reheat in the oven or air fryer.
