Description

Tender chicken and fluffy jasmine rice cooked in a rich coconut milk broth, infused with tropical flavors for a comforting dish.


Ingredients

  • 1 pound boneless, skinless chicken thighs
  • 1 cup jasmine rice
  • 1 can (13.5 oz) coconut milk
  • 1 cup chicken broth
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 tablespoon curry powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)


Instructions

  1. Sauté the chopped onion, garlic, and ginger until translucent.
  2. Add the curry powder and stir for an additional minute to activate the flavors.
  3. Place the chicken thighs in the pan, seasoning well with salt and pepper.
  4. Pour in the coconut milk and chicken broth, then bring to a gentle simmer.
  5. Once simmering, add the jasmine rice, cover, and let it cook until the liquid is absorbed and the chicken is thoroughly cooked, about 20 minutes.
  6. Fluff the rice with a fork and let it rest for 5 minutes before serving.

Notes

For added flavor, serve with fresh cilantro and a squeeze of lime. Consider pairing with a salad or grilled vegetables.
