Ingredients
- 1 pound boneless, skinless chicken thighs
- 1 cup jasmine rice
- 1 can (13.5 oz) coconut milk
- 1 cup chicken broth
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 tablespoon curry powder
- Salt and pepper to taste

Instructions
- Sauté the chopped onion, garlic, and ginger until translucent.
- Add the curry powder and stir for an additional minute to activate the flavors.
- Place the chicken thighs in the pan, seasoning well with salt and pepper.
- Pour in the coconut milk and chicken broth, then bring to a gentle simmer.
