Description

A juicy and tender chicken dish infused with tropical flavors of coconut and zesty lime, perfect for busy weeknights or laid-back weekends.


Ingredients

  • 4 skinless and boneless chicken thighs
  • 1 can (13.5 oz) coconut milk
  • 2 tablespoons lime juice
  • 1 tablespoon lime zest
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish


Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Season the chicken thighs generously with salt and pepper.
  3. Add the chicken to the hot oil and pan-sear for about 5 minutes on each side until golden brown.
  4. Reduce heat and pour in the coconut milk, lime juice, and lime zest; mix well.
  5. Cover the skillet and let it simmer for 15 to 20 minutes until the chicken is fully cooked and tender.
  6. Garnish with fresh cilantro and serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months. Reheat gently and add moisture if needed.
