Ingredients
- 8 oz pasta (rotini or penne)
- 1 cup cherry tomatoes, halved
- 1 cup mozzarella balls, halved
- 1/2 cup fresh basil leaves, torn
- 1/4 cup olive oil
- 2 tbsp balsamic vinegar
- Salt and pepper to taste
Instructions
- Boil a large pot of salted water and cook the pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
- Combine the halved cherry tomatoes and mozzarella in a large mixing bowl.
- Add the cooled pasta to the veggie and cheese mixture.
- Tear the basil leaves and add them in for that fresh aroma.
- Drizzle with olive oil and balsamic vinegar; sprinkle with salt and pepper.
- Toss everything gently until well combined. Taste and adjust seasoning if needed.
Notes
This pasta salad can be enjoyed hot or cold. Store in an airtight container in the fridge for up to three days. Keep the dressing separate if making ahead to maintain freshness.
