Ingredients
- 1 pound chicken breast, diced
- 2 large onions, thinly sliced
- 2 cups long-grain rice
- 4 cups chicken broth
- 1 tablespoon olive oil
- 1 teaspoon thyme
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Cheese for topping (gruyère or mozzarella)
Instructions
- Preheat your oven to 375°F (190°C).
- Heat olive oil in a large skillet over medium heat.
- Add the sliced onions and cook, stirring occasionally, until deeply caramelized, about 15-20 minutes.
- Combine the diced chicken, rice, thyme, garlic powder, and cooked onions in a large baking dish.
- Pour in the chicken broth, and season with salt and pepper. Stir to combine well.
- Cover the dish with foil and bake for 30 minutes.
- Remove the foil, sprinkle cheese on top, and return to the oven for another 10-15 minutes, until the cheese is bubbly and golden.
- Let it sit for a few minutes before serving.
Notes
For richer flavor, deglaze the pan used for caramelizing onions with wine or broth. Experiment with different herbs or spices for variety.
