Description

A comforting dish that blends the rich flavors of French onion soup with tender chicken and rice, perfect for family gatherings or cozy weeknight meals.


Ingredients

  • 1 pound chicken breast, diced
  • 2 large onions, thinly sliced
  • 2 cups long-grain rice
  • 4 cups chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon thyme
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Cheese for topping (gruyère or mozzarella)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat.
  3. Add the sliced onions and cook, stirring occasionally, until deeply caramelized, about 15-20 minutes.
  4. Combine the diced chicken, rice, thyme, garlic powder, and cooked onions in a large baking dish.
  5. Pour in the chicken broth, and season with salt and pepper. Stir to combine well.
  6. Cover the dish with foil and bake for 30 minutes.
  7. Remove the foil, sprinkle cheese on top, and return to the oven for another 10-15 minutes, until the cheese is bubbly and golden.
  8. Let it sit for a few minutes before serving.

Notes

For richer flavor, deglaze the pan used for caramelizing onions with wine or broth. Experiment with different herbs or spices for variety.
