Description

A comforting one-pot meal blending tender chicken, Cajun spices, and creamy Alfredo with orzo for a delightful twist.

Ingredients

  • 1 pound chicken breast, diced
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 tablespoon Cajun seasoning
  • 1 cup Parmesan cheese, grated
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced chicken, seasoning it with salt, pepper, and Cajun seasoning. Cook until browned and cooked through.
  3. Stir in the orzo, allowing it to absorb the flavors for a minute.
  4. Pour in chicken broth and bring to a boil. Reduce heat, cover, and let simmer until orzo is tender, about 10 minutes.
  5. Once the orzo is cooked, stir in heavy cream and Parmesan cheese until creamy.
  6. Adjust seasoning if necessary, then remove from heat.
  7. Garnish with fresh parsley and serve warm.

Notes

For a lighter version, replace heavy cream with half-and-half or a plant-based alternative. Adding vegetables like bell peppers or spinach can enhance nutrition.
