Description
A delightful corn pasta salad featuring crispy beef bacon and a luxurious creamy pesto dressing, perfect for gatherings or a refreshing meal.
Ingredients
- 2 cups pasta (fusilli or penne)
- 1 cup fresh corn (frozen or fresh)
- 6 slices beef bacon
- 1 cup cherry tomatoes (halved)
- 1 cucumber (diced)
- 1 small red onion (thinly sliced)
- 1/2 cup pesto (store-bought or homemade)
- 1/2 cup heavy cream
- Salt and pepper (to taste)
Instructions
- Cook the pasta according to package directions until al dente. Drain and set aside to cool.
- In a skillet, cook the beef bacon over medium heat until crispy. Remove from heat and chop into bite-sized pieces.
- In a blender, combine the pesto and cream. Blend until smooth and creamy.
- In a large mixing bowl, combine the cooled pasta, corn, cherry tomatoes, cucumber, red onion, and beef bacon.
- Pour the creamy pesto dressing over the salad and toss gently to combine. Season with salt and pepper to taste.
- Chill in the refrigerator for at least 30 minutes to allow the flavors to meld before serving.
Notes
For added flavor, consider adding roasted vegetables or fresh herbs. Leftovers can be stored in the refrigerator for up to 3 days.
