A delightful gluten-free alternative to traditional bagels, loaded with protein from cottage cheese and almond flour.
Ingredients
- 1 cup cottage cheese (drained)
- 2 cups almond flour
- 2 large eggs
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- Optional: sesame seeds or everything bagel seasoning for topping
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a bowl, combine the cottage cheese, almond flour, eggs, baking powder, and salt; mix until smooth.
- Divide the mixture into four equal portions and shape each into a bagel, creating a hole in the center.
- Place them on the prepared baking sheet and, if desired, sprinkle the tops with sesame seeds or your favorite seasoning.
- Bake for 20-25 minutes or until golden brown and firm to touch.
Notes
For an extra fluffy texture, drain your cottage cheese well before mixing. You can freeze the bagels after cooling for longer storage.
