These Cottage Cheese Egg Bites are fluffy, creamy, and packed with protein the perfect make-ahead breakfast for busy mornings. Made with simple ingredients like eggs, cottage cheese, and cheese, they bake up light and satisfying every time. Customizable with your favorite veggies or meats, these healthy egg bites are quick to prep, easy to store, and delicious reheated throughout the week.


Ingredients

Base Mixture

  • 8 large eggs
  • 1 cup cottage cheese (0%–2% milk fat)
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder

Cheese & Add-Ins

  • ½ cup shredded cheese (cheddar, mozzarella, or Swiss)
  • 1 cup mix-ins of choice:
  • Chopped spinach
  • Diced peppers
  • Broccoli florets
  • Cooked sausage, ham, or turkey bacon

Optional Toppings

  • Extra shredded cheese for a golden top
  • Fresh herbs such as parsley, chives, or basil


Instructions

  1. Preheat Oven: Preheat to 350°F (175°C) and lightly grease a silicone muffin tray with non-stick spray or olive oil.
  2. Blend the Base: In a high-powered blender, combine eggs, cottage cheese, salt, pepper, garlic powder, and onion powder. Blend until smooth and creamy.
  3. Add Cheese & Mix-Ins: Stir in shredded cheese and your favorite mix-ins like spinach, peppers, or sausage.
  4. Fill Muffin Cups: Pour about ¼ cup of the mixture into each muffin cavity, filling each about ¾ full.
  5. Bake: Bake for 18–22 minutes or until the tops are set and no longer jiggly in the center.
  6. Cool & Serve: Let cool for 5 minutes, then carefully remove from the tray. Enjoy warm or store for later.
