Ingredients

  • 2 large chicken breasts (boneless, skinless)
  • 8 oz linguine pasta
  • ½ cup unsalted butter
  • 4 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh thyme leaves
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • ½ teaspoon crushed red pepper flakes (optional)
  • Salt and pepper, to taste
  • 1 cup chicken broth
  • 1 tablespoon lemon juice
  • Freshly grated Parmesan cheese, for garnish


Instructions

  1. Season the chicken breasts with salt, pepper, and smoked paprika.
  2. Heat a tablespoon of butter in a skillet over medium heat. Cook the chicken for about 6-7 minutes per side until golden and cooked through. Remove and let rest, then slice into strips.
  3. In a large pot, boil salted water. Cook linguine according to package directions until al dente. Drain and set aside, reserving a bit of pasta water.
  4. In the same skillet, add the remaining butter and minced garlic. Sauté until fragrant, about one minute.
  5. Sprinkle in onion powder, thyme, and red pepper flakes. Stir well, then pour in chicken broth and squeeze in lemon juice, simmering for 2-3 minutes.
  6. Add cooked pasta and sliced chicken to the skillet. Toss to coat everything in the rich sauce, adding a splash of reserved pasta water as needed for creaminess.
  7. Plate your creation and brighten it up with chopped parsley and a generous sprinkle of Parmesan cheese.

Notes

Feel free to swap chicken for shrimp or tofu for a different twist. For a vegetarian option, replace chicken with sautéed mushrooms or zucchini and use vegetable broth.
