Ingredients
- 2 large chicken breasts (boneless, skinless)
- 8 oz linguine pasta
- ½ cup unsalted butter
- 4 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon fresh thyme leaves
- 1 teaspoon smoked paprika
- 1 teaspoon onion powder
- ½ teaspoon crushed red pepper flakes (optional)
- Salt and pepper, to taste
- 1 cup chicken broth
- 1 tablespoon lemon juice
- Freshly grated Parmesan cheese, for garnish
Instructions
- Season the chicken breasts with salt, pepper, and smoked paprika.
- Heat a tablespoon of butter in a skillet over medium heat. Cook the chicken for about 6-7 minutes per side until golden and cooked through. Remove and let rest, then slice into strips.
- In a large pot, boil salted water. Cook linguine according to package directions until al dente. Drain and set aside, reserving a bit of pasta water.
- In the same skillet, add the remaining butter and minced garlic. Sauté until fragrant, about one minute.
- Sprinkle in onion powder, thyme, and red pepper flakes. Stir well, then pour in chicken broth and squeeze in lemon juice, simmering for 2-3 minutes.
- Add cooked pasta and sliced chicken to the skillet. Toss to coat everything in the rich sauce, adding a splash of reserved pasta water as needed for creaminess.
- Plate your creation and brighten it up with chopped parsley and a generous sprinkle of Parmesan cheese.
Notes
Feel free to swap chicken for shrimp or tofu for a different twist. For a vegetarian option, replace chicken with sautéed mushrooms or zucchini and use vegetable broth.
