Description

A vibrant and delicious dish combining black beans, corn, tomatoes, and bell peppers, making it a perfect option for gatherings or as a refreshing snack.


Ingredients

  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 cup cherry tomatoes, halved
  • 1 bell pepper (red or yellow), diced
  • 1 small red onion, finely chopped
  • 1 avocado, diced (add just before serving)
  • 1/2 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 1 tablespoon olive oil
  • Salt and pepper to taste


Instructions

  1. Combine black beans, corn, halved cherry tomatoes, diced bell pepper, and chopped red onion in a large mixing bowl.
  2. Whisk together lime juice, olive oil, salt, and pepper in a small bowl to create the dressing.
  3. Pour the dressing over the vegetable and bean mixture.
  4. Toss everything together until well coated.
  5. Fold in the avocado if serving immediately; otherwise, keep it separate until you’re ready to eat.
  6. Refrigerate for at least 30 minutes before serving to let the ingredients meld.

Notes

For added flavor, try different herbs or spices. A pinch of cumin or hot sauce can provide an extra kick.
