Ingredients
- 1 cup dried black-eyed peas
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 4 cups vegetable or chicken broth
- 1 can diced tomatoes
- 1 teaspoon cumin
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 1 bay leaf
- Fresh parsley, for garnish
Instructions
- Soak the black-eyed peas overnight in water. Drain and set aside.
- In a large pot, heat the olive oil over medium heat. Add the onion, garlic, carrot, and celery. Sauté until softened, about 5-7 minutes.
- Stir in the soaked black-eyed peas, broth, diced tomatoes, cumin, bay leaf, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 1 to 1.5 hours until the peas are tender.
- Remove the bay leaf, taste, and adjust seasoning as necessary.
- Serve hot, garnished with fresh parsley.
Notes
For added flavor, consider adding a smoked ham hock or turkey leg during cooking. If you want a creamier soup, blend a portion before serving.
