Description

A comforting Black Eyed Pea Soup, perfect for New Year’s celebrations or cozy family gatherings, bursting with flavors and nutrition.


Ingredients

  • 1 cup dried black-eyed peas
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 4 cups vegetable or chicken broth
  • 1 can diced tomatoes
  • 1 teaspoon cumin
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1 bay leaf
  • Fresh parsley, for garnish


Instructions

  1. Soak the black-eyed peas overnight in water. Drain and set aside.
  2. In a large pot, heat the olive oil over medium heat. Add the onion, garlic, carrot, and celery. Sauté until softened, about 5-7 minutes.
  3. Stir in the soaked black-eyed peas, broth, diced tomatoes, cumin, bay leaf, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 1 to 1.5 hours until the peas are tender.
  5. Remove the bay leaf, taste, and adjust seasoning as necessary.
  6. Serve hot, garnished with fresh parsley.

Notes

For added flavor, consider adding a smoked ham hock or turkey leg during cooking. If you want a creamier soup, blend a portion before serving.
