Ingredients
- 2 tablespoons olive oil
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 4 cups vegetable broth (or beef broth for a heartier flavor)
- 1 can (14.5 oz) diced tomatoes
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Optional: 1 cup pasta or rice (uncooked)
- Fresh parsley, chopped (for garnish)
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the diced onion, carrots, and celery. Sauté for about 5 minutes, until the vegetables start to soften.
- Stir in the minced garlic and diced bell pepper, cooking for an additional 2 minutes.
- Pour in the vegetable (or beef) broth and canned tomatoes, adding thyme, oregano, salt, and pepper. Bring the mixture to a boil.
- If using, stir in the uncooked pasta or rice. Reduce the heat, cover, and let it simmer for 20-25 minutes or until the pasta or rice is cooked through.
- Taste and adjust seasoning as desired. Serve hot, garnished with fresh parsley.
Notes
This soup can be easily customized with different vegetables or proteins. Consider adding shredded chicken or beans for extra heartiness.
