Description

A hearty, comforting chicken stew perfect for busy families, made effortlessly in a crockpot with tender chicken, fresh vegetables, and aromatic herbs.


Ingredients

  • 1.5 lbs boneless chicken thighs
  • 3 medium carrots, chopped
  • 2 medium Yukon Gold potatoes, diced
  • 1 large sweet onion, diced
  • 4 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt & pepper to taste
  • 2 tbsp olive oil
  • 2 bay leaves


Instructions

  1. In a skillet, heat olive oil over medium heat.
  2. Add onions and garlic, sautéing until softened (about 3-4 minutes).
  3. While the aromatics cook, chop your carrots and dice the potatoes.
  4. Season the chicken thighs with salt, pepper, thyme, and rosemary.
  5. Layer the seasoned chicken in the crockpot, followed by the carrots, potatoes, and the sautéed onions and garlic.
  6. Pour the chicken broth over all the ingredients.
  7. Toss in the bay leaves for an extra depth of flavor.
  8. Cover and set to cook on low for 6-8 hours or on high for 3-4 hours until everything is tender.
  9. Remove the bay leaves before serving!

Notes

Sear the chicken for added flavor before adding to the crockpot. Serve with bread or rice.
