A hearty, comforting chicken stew perfect for busy families, made effortlessly in a crockpot with tender chicken, fresh vegetables, and aromatic herbs.
Ingredients
- 1.5 lbs boneless chicken thighs
- 3 medium carrots, chopped
- 2 medium Yukon Gold potatoes, diced
- 1 large sweet onion, diced
- 4 cloves garlic, minced
- 4 cups low-sodium chicken broth
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt & pepper to taste
- 2 tbsp olive oil
- 2 bay leaves
Instructions
- In a skillet, heat olive oil over medium heat.
- Add onions and garlic, sautéing until softened (about 3-4 minutes).
- While the aromatics cook, chop your carrots and dice the potatoes.
- Season the chicken thighs with salt, pepper, thyme, and rosemary.
- Layer the seasoned chicken in the crockpot, followed by the carrots, potatoes, and the sautéed onions and garlic.
- Pour the chicken broth over all the ingredients.
- Toss in the bay leaves for an extra depth of flavor.
- Cover and set to cook on low for 6-8 hours or on high for 3-4 hours until everything is tender.
- Remove the bay leaves before serving!
Notes
Sear the chicken for added flavor before adding to the crockpot. Serve with bread or rice.
