Description

A warm and comforting chicken chili, perfect for chilly evenings or family gatherings, featuring a delightful fusion of flavors.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 can black beans, rinsed and drained
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1-2 cups chicken broth (adjust based on desired consistency)
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Fresh cilantro, for garnish
  • Tortilla strips or chips, for serving


Instructions

  1. Place the chicken breasts at the bottom of the slow cooker.
  2. In a bowl, mix the black beans, corn, diced tomatoes, diced onion, minced garlic, cumin, chili powder, salt, and pepper together, then pour the mixture over the chicken.
  3. Pour in the chicken broth, ensuring the mixture is well combined.
  4. Cover the slow cooker and set it on low for 6-8 hours or high for 3-4 hours.
  5. Once cooked, shred the chicken with two forks right in the slow cooker and stir everything together.
  6. Taste and adjust seasoning if necessary.

Notes

Best served hot, topped with fresh cilantro and crispy tortilla strips. For added richness, consider including avocado or queso fresco.
