Ingredients
- 1.5 lbs boneless, skinless chicken breasts
- 1 can black beans, rinsed and drained
- 1 can corn, drained
- 1 can diced tomatoes with green chilies
- 1 onion, diced
- 3 cloves garlic, minced
- 1-2 cups chicken broth (adjust based on desired consistency)
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- Fresh cilantro, for garnish
- Tortilla strips or chips, for serving
Instructions
- Place the chicken breasts at the bottom of the slow cooker.
- In a bowl, mix the black beans, corn, diced tomatoes, diced onion, minced garlic, cumin, chili powder, salt, and pepper together, then pour the mixture over the chicken.
- Pour in the chicken broth, ensuring the mixture is well combined.
- Cover the slow cooker and set it on low for 6-8 hours or high for 3-4 hours.
- Once cooked, shred the chicken with two forks right in the slow cooker and stir everything together.
- Taste and adjust seasoning if necessary.
