Description

Deliciously stuffed potatoes, perfect for a hearty breakfast or brunch. Packed with flavor and nutrients, they’re customizable with your favorite toppings.


Ingredients

  • 4 large russet potatoes
  • Olive oil
  • Salt
  • Black pepper
  • 1 cup shredded cheese (cheddar or your favorite)
  • 1 cup cooked ground beef
  • 4 large eggs
  • 1/2 cup sour cream
  • Chopped green onions or chives
  • Any additional toppings (like diced tomatoes or avocado)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Scrub the potatoes clean and prick them with a fork a few times. Rub with olive oil and sprinkle with salt before placing them directly on the oven rack.
  3. Bake the potatoes for about 45 minutes or until tender.
  4. Once cooled, slice each potato in half and scoop out most of the flesh, leaving a small border.
  5. In a bowl, mash the scooped potato with ground beef, half of the cheese, sour cream, and seasoning. Stir in the eggs thoroughly.
  6. Refill the potato skins with the mixture and top with the remaining cheese.
  7. Bake for another 10-15 minutes until the tops are golden and bubbly.
