Ingredients
- 4 large russet potatoes
- Olive oil
- Salt
- Black pepper
- 1 cup shredded cheese (cheddar or your favorite)
- 1 cup cooked ground beef
- 4 large eggs
- 1/2 cup sour cream
- Chopped green onions or chives
- Any additional toppings (like diced tomatoes or avocado)
Instructions
- Preheat your oven to 400°F (200°C).
- Scrub the potatoes clean and prick them with a fork a few times. Rub with olive oil and sprinkle with salt before placing them directly on the oven rack.
- Bake the potatoes for about 45 minutes or until tender.
- Once cooled, slice each potato in half and scoop out most of the flesh, leaving a small border.
- In a bowl, mash the scooped potato with ground beef, half of the cheese, sour cream, and seasoning. Stir in the eggs thoroughly.
- Refill the potato skins with the mixture and top with the remaining cheese.
- Bake for another 10-15 minutes until the tops are golden and bubbly.
