A comforting and flavorful one-pot creamy white chicken chili, perfect for cool nights and gatherings.
Ingredients
- 1.5 lbs boneless, skinless chicken breasts
- 2 cans (15 oz each) white beans, drained and rinsed
- 1 can (4 oz) diced green chilies
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 cup chicken broth or stock
- 1 tsp cumin
- 1 tsp chili powder
- ½ tsp salt
- ½ tsp pepper
- Optional toppings: shredded cheese, avocado, sour cream, cilantro
Instructions
- Place the chicken breasts at the bottom of the slow cooker.
- Sprinkle the cumin, chili powder, salt, and pepper over the chicken.
- Add the chopped onion, garlic, drained beans, green chilies, and chicken broth on top.
- Cover and cook on low for 6-8 hours or high for 4 hours.
- When cooking is complete, shred the chicken using two forks and stir to combine.
- Serve hot with your favorite toppings.
Notes
For added flavor, sauté onions and garlic before adding to the slow cooker. Adjust spice levels to taste.
