Description

A comforting and flavorful one-pot creamy white chicken chili, perfect for cool nights and gatherings.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 1 can (4 oz) diced green chilies
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 cup chicken broth or stock
  • 1 tsp cumin
  • 1 tsp chili powder
  • ½ tsp salt
  • ½ tsp pepper
  • Optional toppings: shredded cheese, avocado, sour cream, cilantro


Instructions

  1. Place the chicken breasts at the bottom of the slow cooker.
  2. Sprinkle the cumin, chili powder, salt, and pepper over the chicken.
  3. Add the chopped onion, garlic, drained beans, green chilies, and chicken broth on top.
  4. Cover and cook on low for 6-8 hours or high for 4 hours.
  5. When cooking is complete, shred the chicken using two forks and stir to combine.
  6. Serve hot with your favorite toppings.

Notes

For added flavor, sauté onions and garlic before adding to the slow cooker. Adjust spice levels to taste.
