Description

A vibrant pasta salad featuring sweet corn, crispy beef bacon, and fresh vegetables, perfect for summer gatherings.


Ingredients

  • 8 ounces short pasta (fusilli or penne)
  • 4 slices beef bacon, cooked and chopped
  • 1 cup corn (fresh or frozen)
  • 1 cup bell peppers, diced
  • 1/2 cup red onion, finely chopped
  • 1/4 cup green onions, sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • Salt and pepper to taste
  • Chopped parsley or cilantro for garnish


Instructions

  1. Cook the pasta according to package instructions in salted boiling water until al dente. Drain and rinse under cold water.
  2. Cook the beef bacon in a skillet over medium heat until crispy. Remove, cool, and chop.
  3. Combine the cooked pasta, corn, diced bell peppers, red onion, green onions, cherry tomatoes, and beef bacon in a large mixing bowl.
  4. Whisk together the mayonnaise, apple cider vinegar, salt, and pepper in a small bowl. Pour the dressing over the pasta mixture and toss to coat.
  5. Garnish with fresh herbs before serving.

Notes
