A vibrant pasta salad featuring sweet corn, crispy beef bacon, and fresh vegetables, perfect for summer gatherings.
Ingredients
- 8 ounces short pasta (fusilli or penne)
- 4 slices beef bacon, cooked and chopped
- 1 cup corn (fresh or frozen)
- 1 cup bell peppers, diced
- 1/2 cup red onion, finely chopped
- 1/4 cup green onions, sliced
- 1 cup cherry tomatoes, halved
- 1/4 cup mayonnaise
- 2 tablespoons apple cider vinegar
- Salt and pepper to taste
- Chopped parsley or cilantro for garnish
Instructions
- Cook the pasta according to package instructions in salted boiling water until al dente. Drain and rinse under cold water.
- Cook the beef bacon in a skillet over medium heat until crispy. Remove, cool, and chop.
- Combine the cooked pasta, corn, diced bell peppers, red onion, green onions, cherry tomatoes, and beef bacon in a large mixing bowl.
- Whisk together the mayonnaise, apple cider vinegar, salt, and pepper in a small bowl. Pour the dressing over the pasta mixture and toss to coat.
- Garnish with fresh herbs before serving.
