Description

A creamy and savory pasta salad featuring sharp cheddar, ranch dressing, and beef bacon, perfect for gatherings and picnics.

Ingredients

  • Pasta (rotini or penne)
  • Beef bacon, cooked and chopped
  • Cheddar cheese, shredded (sharp for more flavor)
  • Ranch dressing (store-bought or homemade)
  • Green onions, sliced
  • Bell pepper, diced (any color)
  • Cherry tomatoes, halved
  • Salt and pepper to taste

Instructions

  1. Start by cooking the pasta in boiling salted water until it’s al dente, about 8-10 minutes. Drain and rinse with cold water to stop the cooking process.
  2. In a skillet, cook the beef bacon over medium heat until it’s crispy. Drain on paper towels.
  3. In a large mixing bowl, combine the cooled pasta, chopped beef bacon, cheddar cheese, green onions, bell pepper, and halved cherry tomatoes.
  4. Pour the ranch dressing over the salad and mix until everything is well coated. Season with salt and pepper to taste.
  5. Chill in the refrigerator for at least 30 minutes before serving to let the flavors meld.

Notes

Serve chilled or at room temperature. For a healthier twist, use whole wheat or gluten-free pasta.
