Description

A rich and heartwarming creamy potato soup with crispy bacon, perfect for cold nights and family gatherings.


Ingredients

  • 8 slices bacon (chopped)
  • 4 large potatoes (peeled and diced)
  • 1 onion (chopped)
  • 2 cloves garlic (minced)
  • 4 cups chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Chives or green onions for garnish (optional)


Instructions

  1. In a large pot, heat the chopped bacon over medium heat until it’s crispy. Remove the bacon and set it aside, leaving the drippings in the pot.
  2. Add the chopped onion and minced garlic to the drippings. Sauté until softened and fragrant.
  3. Stir in the diced potatoes and pour in the chicken broth. Bring to a boil, then reduce the heat and simmer until the potatoes are tender, about 15-20 minutes.
  4. Use an immersion blender to puree the soup directly in the pot, or carefully transfer it to a blender in batches for a smooth consistency.
  5. Mix in the heavy cream and season with salt and pepper to taste.
  6. Serve hot, garnishing each bowl with crispy bacon bits and a sprinkle of chives or green onions if desired.

Notes

If you’re in a pinch, turkey bacon can be a healthier alternative. For a vegetarian version, substitute chicken broth with vegetable broth and omit the bacon.
