Description
A rich and heartwarming creamy potato soup with crispy bacon, perfect for cold nights and family gatherings.
Ingredients
- 8 slices bacon (chopped)
- 4 large potatoes (peeled and diced)
- 1 onion (chopped)
- 2 cloves garlic (minced)
- 4 cups chicken broth
- 1 cup heavy cream
- Salt and pepper to taste
- Chives or green onions for garnish (optional)
Instructions
- In a large pot, heat the chopped bacon over medium heat until it’s crispy. Remove the bacon and set it aside, leaving the drippings in the pot.
- Add the chopped onion and minced garlic to the drippings. Sauté until softened and fragrant.
- Stir in the diced potatoes and pour in the chicken broth. Bring to a boil, then reduce the heat and simmer until the potatoes are tender, about 15-20 minutes.
- Use an immersion blender to puree the soup directly in the pot, or carefully transfer it to a blender in batches for a smooth consistency.
- Mix in the heavy cream and season with salt and pepper to taste.
- Serve hot, garnishing each bowl with crispy bacon bits and a sprinkle of chives or green onions if desired.
Notes
If you’re in a pinch, turkey bacon can be a healthier alternative. For a vegetarian version, substitute chicken broth with vegetable broth and omit the bacon.
