Ingredients
- 6 slices of bacon, diced
- 4 medium potatoes, peeled and diced
- 1 onion, chopped
- 4 cups chicken broth
- 1 cup heavy cream
- Salt and pepper to taste
- 2 green onions, chopped (for garnishing)
- 1 cup shredded cheddar cheese (for garnishing)
Instructions
- In a large pot, cook the diced bacon over medium heat until crispy.
- Remove the crispy bacon pieces and set aside, leaving the fat in the pot.
- Add the chopped onion to the pot and cook until translucent, about 3-4 minutes.
- Stir in the diced potatoes, then pour in the chicken broth.
- Bring to a boil, then reduce heat and simmer until potatoes are tender, approximately 15 minutes.
- For a thicker texture, mash some of the potatoes with a potato masher.
- Pour in the heavy cream and add the reserved bacon back into the pot. Stir well.
- Season with salt and pepper to taste.
- Serve hot, garnished with green onions and shredded cheddar cheese.
Notes
For extra flavor, consider saving some bacon fat to sauté the onions. To enhance creaminess, blend a portion before adding the cream. Fresh herbs like parsley or chives can brighten the dish before serving.
