Description

A warm and comforting Bacon Potato Soup with rich flavors and creamy texture, perfect for chilly days or cozy gatherings.


Ingredients

  • 6 slices of bacon, diced
  • 4 medium potatoes, peeled and diced
  • 1 onion, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • 2 green onions, chopped (for garnishing)
  • 1 cup shredded cheddar cheese (for garnishing)


Instructions

  1. In a large pot, cook the diced bacon over medium heat until crispy.
  2. Remove the crispy bacon pieces and set aside, leaving the fat in the pot.
  3. Add the chopped onion to the pot and cook until translucent, about 3-4 minutes.
  4. Stir in the diced potatoes, then pour in the chicken broth.
  5. Bring to a boil, then reduce heat and simmer until potatoes are tender, approximately 15 minutes.
  6. For a thicker texture, mash some of the potatoes with a potato masher.
  7. Pour in the heavy cream and add the reserved bacon back into the pot. Stir well.
  8. Season with salt and pepper to taste.
  9. Serve hot, garnished with green onions and shredded cheddar cheese.

Notes

For extra flavor, consider saving some bacon fat to sauté the onions. To enhance creaminess, blend a portion before adding the cream. Fresh herbs like parsley or chives can brighten the dish before serving.
