Description

A delightful blend of smoky BBQ chicken and fresh pasta salad, perfect for summer gatherings or quick lunches.


Ingredients

  • 2 cups cooked chicken, shredded
  • 8 ounces pasta (your choice)
  • 1 cup cherry tomatoes, halved
  • 1 cup bell peppers, diced
  • 1 small red onion, chopped
  • 1 cup corn (frozen or fresh)
  • 1 cup BBQ sauce
  • ½ cup ranch dressing
  • ¼ cup chopped cilantro
  • Salt and pepper to taste


Instructions

  1. Cook the pasta according to package directions; drain and set aside.
  2. In a skillet, cook the shredded chicken over medium heat, adding BBQ sauce once heated through.
  3. In a large bowl, combine the cooked pasta, chicken, cherry tomatoes, bell peppers, onion, and corn.
  4. Drizzle with ranch dressing and toss gently to combine. Adjust seasoning with salt and pepper as desired.
  5. Stir in chopped cilantro for a fresh finish.
