Ingredients
- 1 cup dried black-eyed peas
- 4 cups chicken broth
- 1 cup chopped smoked turkey
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup heavy cream

- 1 tablespoon olive oil
- Optional: green onions for garnish
Instructions
- Rinse the black-eyed peas and soak them in water for at least four hours or overnight.
- In a large pot, heat the olive oil over medium heat. Toss in the diced onion and minced garlic, sautéing until the onions turn translucent.
- Add the chopped smoked turkey and cook for an additional 2-3 minutes to release its flavor.
- After draining the soaked peas, incorporate them into the pot along with the chicken broth. Bring the mixture to a boil.
- Lower the heat and let it simmer for 30-40 minutes, until the peas are tender.
- Add the heavy cream, seasoning with salt and pepper to taste.
- Cook for another 5 minutes until everything is heated through.
- Serve warm, garnished with green onions if desired.
Notes
Feel free to swap smoked turkey for ham or bacon. For a vegetarian option, omit the turkey and use sautéed mushrooms or smoked paprika.
