Ingredients

  • 1 cup dried black-eyed peas
  • 4 cups chicken broth
  • 1 cup chopped smoked turkey
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Optional: green onions for garnish


Instructions

  1. Rinse the black-eyed peas and soak them in water for at least four hours or overnight.
  2. In a large pot, heat the olive oil over medium heat. Toss in the diced onion and minced garlic, sautéing until the onions turn translucent.
  3. Add the chopped smoked turkey and cook for an additional 2-3 minutes to release its flavor.
  4. After draining the soaked peas, incorporate them into the pot along with the chicken broth. Bring the mixture to a boil.
  5. Lower the heat and let it simmer for 30-40 minutes, until the peas are tender.
  6. Add the heavy cream, seasoning with salt and pepper to taste.
  7. Cook for another 5 minutes until everything is heated through.
  8. Serve warm, garnished with green onions if desired.

Notes

Feel free to swap smoked turkey for ham or bacon. For a vegetarian option, omit the turkey and use sautéed mushrooms or smoked paprika.
