Description

Tender chicken breasts stuffed with a rich mixture of Boursin cheese and fresh spinach, baked to perfection for a delicious meal.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 8 oz Boursin cheese (or similar herb-infused cheese)
  • 2 cups fresh spinach
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken breasts with salt and pepper.
  3. In a skillet, heat olive oil over medium heat and sauté minced garlic until fragrant.
  4. Add spinach to the skillet, cooking until wilted.
  5. Remove the skillet from the heat and mix in the Boursin cheese until well combined.
  6. Stuff each chicken breast with the cheese and spinach mixture.
  7. Place the stuffed chicken in a baking dish and sprinkle with grated Parmesan cheese.
  8. Bake for 30–35 minutes or until the chicken reaches an internal temperature of 165°F (74°C).

Notes

Serve with a light salad or roasted vegetables, and enjoy with garlic bread or herbed quinoa.
