Description
Tender chicken breasts stuffed with a rich mixture of Boursin cheese and fresh spinach, baked to perfection for a delicious meal.
Ingredients
- 4 boneless, skinless chicken breasts
- 8 oz Boursin cheese (or similar herb-infused cheese)
- 2 cups fresh spinach
- 2 cloves garlic, minced
- 2 tbsp olive oil
- Salt and pepper to taste
- 1/2 cup grated Parmesan cheese
Instructions
- Preheat your oven to 375°F (190°C).
- Season the chicken breasts with salt and pepper.
- In a skillet, heat olive oil over medium heat and sauté minced garlic until fragrant.
- Add spinach to the skillet, cooking until wilted.
- Remove the skillet from the heat and mix in the Boursin cheese until well combined.
- Stuff each chicken breast with the cheese and spinach mixture.
- Place the stuffed chicken in a baking dish and sprinkle with grated Parmesan cheese.
- Bake for 30–35 minutes or until the chicken reaches an internal temperature of 165°F (74°C).
Notes
Serve with a light salad or roasted vegetables, and enjoy with garlic bread or herbed quinoa.
