Description

A comforting pasta dish with tender chicken and a rich butter sauce, perfect for chilly nights.


Ingredients

  • 1 pound of chicken breast, diced
  • 8 ounces of pasta (your choice; fettuccine works well)
  • ½ cup unsalted butter
  • 1 onion, finely chopped
  • 3 cloves of garlic, minced
  • 1 teaspoon paprika (smoked if preferred)
  • 1 teaspoon dried Italian herbs
  • Salt and pepper, to taste
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • Fresh parsley, for garnish


Instructions

  1. Bring a large pot of salted water to a boil and cook pasta according to package instructions until al dente.
  2. Melt the butter in a skillet over medium heat; add onions and sauté until translucent.
  3. Stir in garlic, paprika, and Italian herbs, cooking for an additional minute until fragrant.
  4. Add the diced chicken, seasoning with salt and pepper; cook until the chicken is cooked through.
  5. Pour in the heavy cream and bring to a simmer, then stir in the Parmesan cheese until fully melted.
  6. Drain pasta, reserving a little pasta water, and add to the skillet, tossing to combine. Add pasta water if the sauce is too thick.
  7. Serve warm, garnished with fresh parsley.
