Ingredients
- 1 pound of chicken breast, diced
- 8 ounces of pasta (your choice; fettuccine works well)
- ½ cup unsalted butter
- 1 onion, finely chopped
- 3 cloves of garlic, minced
- 1 teaspoon paprika (smoked if preferred)
- 1 teaspoon dried Italian herbs
- Salt and pepper, to taste
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- Fresh parsley, for garnish
Instructions
- Bring a large pot of salted water to a boil and cook pasta according to package instructions until al dente.
- Melt the butter in a skillet over medium heat; add onions and sauté until translucent.
- Stir in garlic, paprika, and Italian herbs, cooking for an additional minute until fragrant.
- Add the diced chicken, seasoning with salt and pepper; cook until the chicken is cooked through.
- Pour in the heavy cream and bring to a simmer, then stir in the Parmesan cheese until fully melted.
- Drain pasta, reserving a little pasta water, and add to the skillet, tossing to combine. Add pasta water if the sauce is too thick.
- Serve warm, garnished with fresh parsley.
