Description

A delightful creamy pasta salad featuring avocados, romaine, and a tangy Caesar dressing, perfect as a side or light main dish.


Ingredients

  • 8 oz rotini or fusilli pasta
  • 1 ripe avocado, diced
  • 2 cups romaine lettuce, chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup Caesar dressing
  • Freshly cracked black pepper, to taste
  • Optional: croutons for topping


Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions until al dente. Drain and rinse under cold water to stop the cooking process.
  2. Prepare the dressing: If making homemade dressing, combine mayonnaise, sour cream, garlic, Worcestershire sauce, lemon juice, and Parmesan cheese. Adjust seasoning as desired.
  3. Combine the ingredients: In a large mixing bowl, toss the cooled pasta with chopped romaine, diced avocado, cherry tomatoes, cheese, and dressing. Mix gently to avoid mashing the avocados.
  4. Season to taste: Add freshly cracked black pepper and additional cheese if desired. Mix gently to combine.
  5. Serve and enjoy: For added crunch, top with croutons before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Add lemon juice before storing to prevent avocado browning.
