Description

A quick and comforting one-pan meal bursting with Cajun flavors, perfect for busy weeknights.


Ingredients

  • 1 lb chicken breast, diced
  • 2 tablespoons Cajun seasoning
  • 1 cup rice
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Olive oil for cooking
  • Chopped parsley for garnish (optional)


Instructions

  1. Heat olive oil over medium heat in a skillet. Add diced chicken coated with Cajun seasoning and cook until browned and thoroughly cooked, about 5-7 minutes.
  2. While the chicken cooks, prepare rice in a separate pot using chicken broth for added flavor.
  3. Once the rice is ready, reduce heat and stir heavy cream and Parmesan cheese into the chicken skillet. Season with salt and pepper to taste.
  4. Spoon the creamy chicken mixture over the cooked rice in bowls and garnish with parsley if desired.

Notes

For alternatives, use brown rice or cauliflower rice; swap chicken for shrimp or tofu for a vegetarian option. Store leftovers in airtight containers in the refrigerator for 3-4 days or freeze for up to 3 months.
