Ingredients
- 1 lb chicken breast, diced
- 2 tablespoons Cajun seasoning
- 1 cup rice
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese

- Chopped parsley for garnish (optional)
Instructions
- Heat olive oil over medium heat in a skillet. Add diced chicken coated with Cajun seasoning and cook until browned and thoroughly cooked, about 5-7 minutes.
- While the chicken cooks, prepare rice in a separate pot using chicken broth for added flavor.
- Once the rice is ready, reduce heat and stir heavy cream and Parmesan cheese into the chicken skillet. Season with salt and pepper to taste.
- Spoon the creamy chicken mixture over the cooked rice in bowls and garnish with parsley if desired.
