A creamy and spicy pasta dish that combines juicy chicken, bell peppers, and a rich sauce, perfect for weeknight dinners or gatherings.
Ingredients
- 2 chicken breasts
- 2 tablespoons Cajun seasoning
- 8 ounces pasta (fettuccine or penne)
- 1 cup heavy cream
- 1 cup chicken broth
- 1 tablespoon olive oil
- 1 bell pepper, sliced
- 1 onion, chopped
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook the pasta according to package instructions. Once al dente, drain, and set aside.
- Generously season the chicken breasts with Cajun seasoning on both sides.
- In a large skillet, heat the olive oil over medium heat. Add the seasoned chicken and cook until golden brown and fully cooked through, about 6-7 minutes per side. Remove and set aside.
- In the same skillet, add the chopped onions and sliced bell peppers. Sauté until tender, about 3-4 minutes.
- Pour in the chicken broth and heavy cream, stirring to combine. Bring to a gentle simmer.
- Slice the cooked chicken and return it to the skillet.
- Add the cooked pasta and ensure it’s well-coated with the sauce.
- Season to taste with salt and pepper. Garnish with fresh parsley before serving.
Notes
For a lighter option, substitute heavy cream with half-and-half or Greek yogurt. Store leftovers in an airtight container for up to 3 days.
