Description

A creamy and spicy pasta dish that combines juicy chicken, bell peppers, and a rich sauce, perfect for weeknight dinners or gatherings.


Ingredients

  • 2 chicken breasts
  • 2 tablespoons Cajun seasoning
  • 8 ounces pasta (fettuccine or penne)
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 tablespoon olive oil
  • 1 bell pepper, sliced
  • 1 onion, chopped
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. Cook the pasta according to package instructions. Once al dente, drain, and set aside.
  2. Generously season the chicken breasts with Cajun seasoning on both sides.
  3. In a large skillet, heat the olive oil over medium heat. Add the seasoned chicken and cook until golden brown and fully cooked through, about 6-7 minutes per side. Remove and set aside.
  4. In the same skillet, add the chopped onions and sliced bell peppers. Sauté until tender, about 3-4 minutes.
  5. Pour in the chicken broth and heavy cream, stirring to combine. Bring to a gentle simmer.
  6. Slice the cooked chicken and return it to the skillet.
  7. Add the cooked pasta and ensure it’s well-coated with the sauce.
  8. Season to taste with salt and pepper. Garnish with fresh parsley before serving.

Notes

For a lighter option, substitute heavy cream with half-and-half or Greek yogurt. Store leftovers in an airtight container for up to 3 days.
