A warm and satisfying one-pot pasta dish featuring tender chicken in a creamy, spicy Cajun sauce, perfect for stress-free weeknight dinners.


Ingredients

  • 1 1/2 pounds boneless, skinless chicken breasts
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1/2 yellow onion, sliced
  • 3 cups low-sodium chicken broth
  • 8 ounces cream cheese, cubed
  • 1 cup shredded Parmesan cheese
  • 12 ounces penne or rotini pasta
  • Fresh parsley for garnish
  • Extra Parmesan cheese for serving
  • Crushed red pepper flakes, if desired


Instructions

  1. Season the chicken breasts with Cajun seasoning, garlic powder, paprika, salt, and pepper. Marinate for 15-20 minutes for enhanced flavor.
  2. Place the seasoned chicken in the slow cooker. Layer sliced bell peppers and onion on top, and pour in the chicken broth.
  3. Cook on low for 6-7 hours or on high for 3-4 hours.
  4. Once cooked, shred the chicken with forks and return it to the pot.
  5. Add cubed cream cheese and shredded Parmesan. Stir until melted and creamy, and let it cook on low for an additional 10-15 minutes.
  6. Cook pasta separately according to package instructions until al dente. Drain and add to the slow cooker mixture.
  7. Serve hot, garnished with fresh parsley, extra cheese, and crushed red pepper flakes.

Notes

For best results, use high-quality Cajun seasoning and consider marinating the chicken overnight. You can also substitute chicken for shrimp for a delightful twist.
