Description

A comforting dish featuring tender chicken, creamy sauce, and fluffy rice, perfect for busy weeknights or family gatherings.


Ingredients

  • 2 chicken breasts
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup long-grain rice
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Chopped parsley for garnish


Instructions

  1. In a large skillet, warm the olive oil over medium heat. Season the chicken breasts generously with salt and pepper.
  2. Once hot, add the chicken to the skillet. Cook for about 6-7 minutes per side, or until golden brown and cooked through. Remove and set aside.
  3. In the same skillet, add the chopped onion and minced garlic. Sauté until the onion is translucent, about 2-3 minutes.
  4. Pour in the chicken broth and heavy cream, stirring until well combined. Bring the mixture to a gentle simmer.
  5. Add the rice, then return the chicken to the skillet. Stir together, cover, and reduce the heat. Cook on low for about 20 minutes, or until the rice is tender and has absorbed the creamy sauce.
  6. Fluff the rice with a fork and garnish with chopped parsley before serving.

Notes

For a lighter dish, substitute the heavy cream with half-and-half. Store leftovers in an airtight container in the refrigerator for up to 3 days.
