Ingredients

  • 1 lb chicken sausage (remove casings if necessary)
  • 1 cup orzo pasta
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 bell pepper, diced
  • 1 cup spinach
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • Olive oil
  • Salt and pepper to taste
  • Fresh Parmesan cheese (for serving)


Instructions

  1. In a large skillet, heat olive oil over medium heat. Add chopped onion and garlic, sautéing until fragrant.
  2. Incorporate the chicken sausage, breaking it into pieces until browned.
  3. Stir in the diced bell pepper and cook for a few minutes to soften.
  4. Add the orzo, followed by the chicken broth. Bring to a gentle boil, then reduce to a simmer.
  5. Once the orzo has absorbed most of the liquid, stir in the spinach and cream, cooking until creamy.
  6. Season with salt and pepper, adjusting to taste.
