Ingredients
- 1 pound Chicken thighs
- 1 cup Greek yogurt
- 1 medium Onion, finely chopped
- 1 medium Shallot, finely chopped
- 4 cloves Garlic, minced
- 1 tablespoon Fresh Ginger, grated
- 2 tablespoons Garam Masala
- 1 teaspoon Turmeric
- 1 teaspoon Kosher salt
- 1 teaspoon Paprika
- 2 tablespoons Tomato paste (optional)
- 1 can Coconut milk
- 1 teaspoon Chili flakes
- 2 tablespoons Butter
- 1/4 cup Cilantro, for garnish
- 2 tablespoons Sesame seeds (optional)
Instructions
- In a bowl, mix the chicken, yogurt, garlic, ginger, and spices. Let it marinate for at least 30 minutes, or overnight for richer flavor.
- Transfer the marinated chicken to the crockpot.
- Stir in the chopped onions, shallots, coconut milk, and tomato paste.
- Cook on low for about 6 hours, letting the flavors meld together.
- When ready, stir in butter, and adjust seasoning if needed. Garnish with cilantro and sesame seeds before serving.
Notes
For a vegan option, replace chicken with tofu and yogurt with a nut-based alternative. Serve with basmati rice and naan bread.
