A comforting dish featuring tender chicken in a rich ranch sauce with perfectly cooked penne pasta.
Ingredients
- 1 pound boneless, skinless chicken breasts
- 8 ounces penne pasta
- 1 cup chicken broth
- 1 packet ranch seasoning mix
- 1 cup cream cheese, softened
- 1 cup shredded cheese (cheddar or your choice)
- Optional: green onions for garnish
Instructions
- Cook the penne according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat some oil over medium heat and add the chicken breasts. Season with salt and pepper, and cook until browned and no longer pink, about 6-7 minutes per side.
- Remove the chicken, shred it, and set aside.
- In the same skillet, pour in the chicken broth and stir in the ranch seasoning. Bring to a simmer.
- Add the cream cheese to the skillet, whisking until it melts and the sauce becomes smooth.
- Return the shredded chicken to the skillet, then add the cooked penne. Stir until everything is well-coated with the sauce.
- Mix in the shredded cheese until melted and combined.
Notes
Serve hot, topped with sliced green onions. Pairs well with a light salad or roasted vegetables. Perfect as leftovers for meal prep.
