Description

A comforting dish featuring tender chicken in a rich ranch sauce with perfectly cooked penne pasta.


Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 8 ounces penne pasta
  • 1 cup chicken broth
  • 1 packet ranch seasoning mix
  • 1 cup cream cheese, softened
  • 1 cup shredded cheese (cheddar or your choice)
  • Optional: green onions for garnish


Instructions

  1. Cook the penne according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat some oil over medium heat and add the chicken breasts. Season with salt and pepper, and cook until browned and no longer pink, about 6-7 minutes per side.
  3. Remove the chicken, shred it, and set aside.
  4. In the same skillet, pour in the chicken broth and stir in the ranch seasoning. Bring to a simmer.
  5. Add the cream cheese to the skillet, whisking until it melts and the sauce becomes smooth.
  6. Return the shredded chicken to the skillet, then add the cooked penne. Stir until everything is well-coated with the sauce.
  7. Mix in the shredded cheese until melted and combined.

Notes

Serve hot, topped with sliced green onions. Pairs well with a light salad or roasted vegetables. Perfect as leftovers for meal prep.
