Ingredients
- 2 tablespoons Coconut Oil (or Olive Oil)
- 1.5 cups Yellow Onion (finely diced)
- 2 tablespoons Ginger Paste
- 4 cloves Minced Garlic
- 2 teaspoons Smoked Paprika
- 2 teaspoons Ground Cumin
- 1 teaspoon Ground Turmeric
- 2 teaspoons Garam Masala
- 28 ounces Diced Tomatoes (canned)
- 2 pounds Boneless Skinless Chicken Thighs
- 1 cup Heavy Cream (or coconut cream)
Instructions
- Finely dice the onions and mince the garlic.
- In your slow cooker, combine the coconut oil, onions, ginger paste, garlic, smoked paprika, cumin, turmeric, garam masala, and diced tomatoes.
- Place the chicken thighs on top of the mixture, ensuring they’re well coated.
- Cook on low heat for about 4 hours until the chicken is fork-tender.
- Stir in the heavy cream or coconut cream just before serving.
