Description

A hearty and creamy tortellini soup perfect for chilly evenings, effortlessly prepared in a crockpot.


Ingredients

  • 1 package of tortellini (fresh or frozen)
  • 4 cups of vegetable or chicken broth
  • 1 can of diced tomatoes
  • 1 cup of heavy cream
  • 1 cup of spinach (fresh or frozen)
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • Salt and pepper to taste
  • Parmesan cheese for serving (optional)


Instructions

  1. In your slow cooker, combine the broth, diced tomatoes, diced onion, and minced garlic.
  2. Cover and cook on low for about 4 hours.
  3. Add the tortellini and spinach to the slow cooker.
  4. Pour in the heavy cream and stir until everything is well combined.
  5. Cook for an additional 30 minutes, or until the tortellini is tender and cooked through.
  6. Season with salt and pepper to your liking.
  7. Serve hot, topping with parmesan cheese if you wish.

Notes

Feel free to customize with whatever veggies you have on hand. If you want a lighter version, substitute heavy cream for half-and-half or a non-dairy alternative.
