A hearty and creamy tortellini soup perfect for chilly evenings, effortlessly prepared in a crockpot.
Ingredients
- 1 package of tortellini (fresh or frozen)
- 4 cups of vegetable or chicken broth
- 1 can of diced tomatoes
- 1 cup of heavy cream
- 1 cup of spinach (fresh or frozen)
- 1 onion, diced
- 2 cloves of garlic, minced
- Salt and pepper to taste
- Parmesan cheese for serving (optional)
Instructions
- In your slow cooker, combine the broth, diced tomatoes, diced onion, and minced garlic.
- Cover and cook on low for about 4 hours.
- Add the tortellini and spinach to the slow cooker.
- Pour in the heavy cream and stir until everything is well combined.
- Cook for an additional 30 minutes, or until the tortellini is tender and cooked through.
- Season with salt and pepper to your liking.
- Serve hot, topping with parmesan cheese if you wish.
Notes
Feel free to customize with whatever veggies you have on hand. If you want a lighter version, substitute heavy cream for half-and-half or a non-dairy alternative.
