Description

A comforting dish of tender chicken in a creamy, garlicky sauce with orzo pasta and fresh spinach, perfect for busy weeknights or family gatherings.


Ingredients

  • 1 pound chicken breast
  • 1 cup orzo pasta
  • 2 cups fresh spinach
  • 1 can (14 oz) diced tomatoes
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Parmesan cheese for serving


Instructions

  1. Place the chicken breasts in your crockpot.
  2. Add the orzo, diced tomatoes, chicken broth, heavy cream, garlic, and Italian seasoning.
  3. Stir well to combine and season with salt and pepper.
  4. Cover the crockpot and cook on low for 4-6 hours or until the chicken is cooked through.
  5. About 30 minutes before serving, stir in the fresh spinach until just wilted.
  6. Shred the chicken in the pot and mix everything well.
  7. Serve hot, topped generously with Parmesan cheese.

Notes

For a dairy-free version, substitute heavy cream with coconut cream. Consider using turkey instead of chicken if desired.
