Ingredients
- 1 pound chicken breast
- 1 cup orzo pasta
- 2 cups fresh spinach
- 1 can (14 oz) diced tomatoes
- 1 cup chicken broth
- 1 cup heavy cream
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Parmesan cheese for serving
Instructions
- Place the chicken breasts in your crockpot.
- Add the orzo, diced tomatoes, chicken broth, heavy cream, garlic, and Italian seasoning.
- Stir well to combine and season with salt and pepper.
- Cover the crockpot and cook on low for 4-6 hours or until the chicken is cooked through.
- About 30 minutes before serving, stir in the fresh spinach until just wilted.
- Shred the chicken in the pot and mix everything well.
- Serve hot, topped generously with Parmesan cheese.
Notes
For a dairy-free version, substitute heavy cream with coconut cream. Consider using turkey instead of chicken if desired.
