Description

A flavorful, comforting slow cooker dish featuring chicken, sun-dried tomatoes, spinach, and a creamy sauce.


Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1 cup sun-dried tomatoes (packed in oil, drained and roughly chopped)
  • 3 cups fresh spinach
  • 1 cup heavy cream (or coconut cream for a lighter alternative)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Olive oil for sautéing (optional)


Instructions

  1. Sauté the aromatics: In a skillet, heat olive oil over medium heat. Sauté the onion and garlic until they’re translucent and fragrant, about 3-4 minutes.
  2. Prepare the chicken: Place the chicken breasts into the slow cooker. Season them generously with salt, pepper, oregano, and basil.
  3. Add ingredients: Layer the sautéed onions and garlic over the chicken. Then, add sun-dried tomatoes and fresh spinach.
  4. Pour in the cream: Add the heavy cream on top of everything in the slow cooker. Do not stir; let the cream sit on top.
  5. Slow cook: Cover the slow cooker and cook on low for about 360 minutes or until the chicken is cooked through and tender.
  6. Shred and serve: Once cooked, shred the chicken directly in the slow cooker with two forks. Stir everything well to combine the creamy sauce with the chicken and veggies.
