Description
A creamy, tangy pasta salad inspired by the flavors of deviled eggs.
Ingredients
- 8 oz pasta (elbow or rotini)
- 3 large eggs, hard-boiled, peeled and chopped
- 1/2 cup mayonnaise
- 2 tablespoons mustard (Dijon or yellow)
- 1 tablespoon white vinegar
- 1/4 teaspoon paprika
- Salt and pepper to taste
- 1 cup diced celery
- 1/4 cup chopped green onions
- Fresh herbs (like dill or parsley) for garnish
Instructions
- Cook the pasta according to package instructions until al dente. Drain and let it cool slightly.
- In a large bowl, combine the mayonnaise, mustard, vinegar, paprika, salt, and pepper.
- Fold in the chopped eggs, celery, and green onions, mixing gently.
- Add the cooled pasta and stir until everything is well coated.
- Chill in the refrigerator for at least 30 minutes to let the flavors develop.
- Before serving, adjust seasoning to taste and garnish with fresh herbs.
