Description

A creamy, tangy pasta salad inspired by the flavors of deviled eggs.


Ingredients

  • 8 oz pasta (elbow or rotini)
  • 3 large eggs, hard-boiled, peeled and chopped
  • 1/2 cup mayonnaise
  • 2 tablespoons mustard (Dijon or yellow)
  • 1 tablespoon white vinegar
  • 1/4 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup diced celery
  • 1/4 cup chopped green onions
  • Fresh herbs (like dill or parsley) for garnish


Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and let it cool slightly.
  2. In a large bowl, combine the mayonnaise, mustard, vinegar, paprika, salt, and pepper.
  3. Fold in the chopped eggs, celery, and green onions, mixing gently.
  4. Add the cooled pasta and stir until everything is well coated.
  5. Chill in the refrigerator for at least 30 minutes to let the flavors develop.
  6. Before serving, adjust seasoning to taste and garnish with fresh herbs.

Notes

Best served cold, pairs well with grilled chicken or seafood.
