Description

Creamy and flavorful egg salad sandwiches that are quick to prepare and perfect for any occasion.


Ingredients

  • 6 large eggs
  • 1/4 cup mayonnaise
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh chives or green onions
  • 2 slices of bread (optional, for sandwich)


Instructions

  1. Start by hard boiling the eggs. Place them in a pot of water, bring to a boil, then lower the heat to let them simmer for 10-12 minutes.
  2. Once done, carefully transfer the eggs into a bowl of cold water to cool them down.
  3. After they’re cool enough to handle, peel the shells off and chop the eggs into small pieces.
  4. In a mixing bowl, combine the chopped eggs, mayonnaise, Dijon mustard, salt, pepper, and chives.
  5. Stir everything together until you achieve a smooth and creamy mixture.
  6. Serve it as is, or spread it generously between slices of bread to create a sandwich.

Notes

For a lighter version, substitute Greek yogurt for mayonnaise. You can also add avocado for extra creaminess.
