Description

A comforting one-pan meal combining chicken and potatoes in a rich, cheesy garlic sauce.

Ingredients

  • 1 pound chicken breasts, cut into bite-sized pieces
  • 4 medium potatoes, peeled and diced
  • 1 cup shredded cheese (cheddar or your favorite blend)
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream (or a lighter alternative)
  • Olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the chicken pieces and season with salt and pepper. Cook until browned, about 5-7 minutes.
  2. Add the minced garlic and sauté for another minute until fragrant.
  3. Stir in the diced potatoes, then pour in the chicken broth and bring to a simmer. Cover and cook for about 15 minutes, or until the potatoes are tender.
  4. Reduce heat, then stir in the heavy cream and cheese. Mix until the cheese is melted and the sauce is creamy.
  5. Serve immediately, garnished with fresh parsley if desired.

Notes

Use fresh garlic for enhanced flavor. For added nutrition, consider tossing in vegetables like broccoli or bell peppers.
