Ingredients
- 1 pound chicken breasts, cut into bite-sized pieces
- 4 medium potatoes, peeled and diced
- 1 cup shredded cheese (cheddar or your favorite blend)
- 4 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream (or a lighter alternative)
- Olive oil
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Heat olive oil in a large skillet over medium heat. Add the chicken pieces and season with salt and pepper. Cook until browned, about 5-7 minutes.
- Add the minced garlic and sauté for another minute until fragrant.
- Stir in the diced potatoes, then pour in the chicken broth and bring to a simmer. Cover and cook for about 15 minutes, or until the potatoes are tender.
- Reduce heat, then stir in the heavy cream and cheese. Mix until the cheese is melted and the sauce is creamy.
- Serve immediately, garnished with fresh parsley if desired.
