Ingredients
- 1 cup long-grain rice (or your choice of rice)
- 3 cloves garlic, minced
- 1 onion, finely diced
- 2 cups vegetable or chicken broth
- 1/2 cup heavy cream
- 1/2 cup Parmesan cheese, grated
- 2 tablespoons butter
- Salt and pepper, to taste
Instructions
- Heat butter in a large skillet over medium heat. Add the diced onion and sauté until translucent.
- Stir in minced garlic and cook for another minute until fragrant.
- Add the rice, tossing it with the onion and garlic mixture, and toast lightly for 2-3 minutes.
- Pour in the broth, ensuring it covers the rice. Bring to a simmer, then cover and reduce heat. Cook according to the rice package instructions.
- Once cooked, if necessary, stir in heavy cream until combined and then add grated Parmesan, mixing until melted and creamy. Adjust seasoning with salt and pepper.
Notes
For a lighter option, replace heavy cream with a lighter alternative. Adjust the seasoning as needed, and consider adding roasted garlic or experimenting with different cheeses.
